Red pepper and feta pie

Another one of these meals that barely take any time to make. I always keep ready made puff pastry squares on my freezer just in case:-) it’s amazing for both sweet and savory dishes ☺ This will take about 30 minutes to make, and it will surely impress everyone

What you need:

1 puff pastry sheet

1 chopped red pepper

200 grams feta cheese

1/4 cup fried pine nuts

A handful of rocket leaves


Line the puff pastry sheet into a rectangular, well-oiled pan. Top with chopped red pepper, and Feta cheese. Bake for about 25 minutes. Remove from the oven and sprinkle with pine nuts and rocket leaves.

Cheese Pizza

My perfectly imperfect pizzas 🍕 I was spending time with my kids and niece yesterday and I really didn’t feel like ordering a ready-made one. Granted, they had to wait a bit longer to have lunch, but really enjoyed the final result.

What you need:
230 ml lukewarm water
1.5 teaspoon sugar
1.5 teaspoon fast-acting yeast
2 was tablespoons olive oil
410 grams strong bread flour
1 teaspoon salt
Combine water, yeast and sugar in jug and set aside for 10 minutes until frothy, then add the olive oil. Sift the flour and salt and make a well, the add the liquid mixture. Knead(I use my kitchen aid) for 5 minutes, place in oiled bowl and leave to rise for 1 hour. Divide into 6 balls, spread then add the toppings of your choice☺️ bake in the preheated oven until crust is golden and cheese is melted. Enjoy!

Creamy chicken pasta

I had extra chicken in the fridge the other day and decided to use it to make pasta. The whole prep and cooking time didn’t take more than 30 minutes, and that’s what I really like about this dish.


What you need:

350 grams spaghetti, cooked
1 tablespoon oil
300 grams chicken, sliced
350 grams chopped mushrooms
1 cup cream
Grated Parmesan
1 teaspoon ground nutmeg
Basil, to garnish
Heat the oil in a pan and sauté the chicken until cooked. Add the mushrooms and cook for about 3 minutes. Add the cream and nutmeg and boil on low to medium fire for about 15 minutes. Combine with the pasta and add Parmesan, to taste. Enjoy!

Siyyadieh(Fish Stew)

For the longest, I thought Siyyadieh(Lebanese fish stew) was a hard dish to make. Boy, was I wrong! Not only was it pretty straight-forward, but it was a clear winner in our home.

What you need:

  • 1 tablespoon vegetable oil
  • 1 medium sliced onion
  • 4 cups of water
  • 2 cups Sunwhite Calrose rice
  • 1/2 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon caraway
  • 1/4 teaspoon cinnamon
  • 2 teaspoons  salt
  • 1 kg fish filled, de-skinned and bones removed
  • 5 tablespoons almond slices, toasted


  1. In a deep pot, heat vegetable oil and saute onion until golden brown. Set aside.
  2. Add water and spices and bring to a boil. Add rice and simmer for 3-5 minutes until it boils.
  3. Place fish pieces over rice, cover and continue cooking over medium-low heat until water is fully absorbed and rice is tender. Spoon rice and fish onto a serving plate and garnish with reserved onions and almonds.


Oven-baked Salmon

Lemon and garlic baked salmon, yummy recipe from @cafedelites

– 4-6 salmon fillets, skin removed
-2 tbsp minced garlic
-2 tbsp fresh chopped parsley
-1/3 cup squeezed lemon juice
-1 tsp salt
-1/2 tsp black pepper
-1 lemon to garnish
-1/3 cup beans/peas(optional)

Preheat oven. Rub each fillet with garlic and parsley then our oven the lemon juice. Add olive oil and season with salt and pepper. Arrange the asparagus and greens. Place the lemon slices and bake for 10 minutes. Enjoy!

Vegetable Spring Casserole


What you need: 

1 tbsp oil
4 chopped carrots1 leek
2 spring onions
2 celery sticks
1 broccoli head
500 ml vegetable stock
1 lemon rind
1/4 cup cream
Salt and Pepper

Sauté the chopped veggies with the oil for about 5 minutes. Then add the vegetable stock and the lemon rind. Boil for 15 minutes(covered) then add 1/4 cup cream and boil for another 10 minutes. Season with salt and pepper and serve with Basmati rice on the side!

Beef Stir Fry

I love recipes that are really simple to make but look impressive on the dinner table. You can adapt this recipe to your liking, and add the veggies that you like. Enjoy!

What you need: 

-1/2 cup soy sauce low sodium
– 2 tbsp cornstarch
– 3 tablespoons apple cider
– 3 cloves garlic minced
– 3 tbsp honey
– 1 tsp fresh ginger minced
– 2 tbsp sesame oil
– 1/2 cup beef broth or chicken broth, low sodium or no sodium
– 1 tbsp olive oil
– 500 grams beef fillet
– 1 carrot, cut lengthways
– 6 small pieces of asparagus

In a medium bowl, whisk together the soy sauce, cornstarch, garlic, apple cider, honey, ginger, sesame oil, and chicken broth. Set aside until ready to use.
Heat the olive oil in a large skillet and cook the steak until it starts to brown, about 4 to 5 minutes. Add sauce and stir in with the steak, it should start to thicken immediately. Add broccoli and cook for an additional 2 minutes until broccoli is tender and sauce is thickened.
Serve over rice or noodles.

Asparagus Risotto


  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 chopped onion
  • 1 cup Arborio rice
  • 3 ½ cups of water
  • 1 Maggi cube
  • 10 asparagus, chopped into small pieces (with the thick side cut)
  • 2 tablespoons of Parmesan
  • Salt and pepper

Combine 5 of the asparagus pieces with ¼ cup water into a mixer until they form a smooth paste. Heat the oil and butter then add the chopped onions. Cook until soft. (for about 2 minutes). Then add the Arborio rice and mix well. Add the paste and bring it to the boil with rice for about 2 minutes. Combine the Maggi cube with a cup of water then add on top of the rice until almost incorporated in the rice. Add one more cup of water and mix from time to time until it’s absorbed by the rice then add the last cup of water with the rest of the chopped asparagus and boil until the rice is soft and asparagus is cooked. Sprinkle with Parmesan then season with salt and pepper and enjoy!

Shrimp ravioli with pink sauce

This is one of my favorite recipes out there (I know I say that for a lot of recipes!). This shrimp ravioli is soooo easy to make, so rich and creamy, that it’ll leave everyone impressed.

What you’ll need:

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 chopped onion
  • 2 crushed garlic cloves
  • 2 tomato sauce cans
  • 1 cup heavy cream
  • 2 tablespoons chopped basil
  • Dash of sugar
  • 1 tablespoon Parmesan
  • Salt and pepper
  • 500 grams of ravioli


Heat 1 tablespoon of olive oil in a pan and fry the chopped onion for about 2 minutes until soft. Add
the garlic and fry for another minute. Pour the tomato sauce, the dash of sugar, the chopped basil
and bring it to boil. Add the cream and let it boil for about 25 minutes until thick.
In the meantime, boil and drain the pasta. Fry the shrimps with 1 tablespoon olive oil until cooked.
To finish off the sauce, add salt and pepper then incorporate the shrimps. Pour on the pasta and
sprinkle with Parmesan. Enjoy!

Chicken Stroganoff

This is one my my favorite recipes- hands down. There are so many versions of Chicken or Beef Stroganoff  but I feel like the combination of tomato sauce with cream gives the perfect taste:-)

Beef Stroganoff

What you need:

  • 2 tablespoons cooking oil
  • 2 Tablespoons olive oil
  • 500 grams of chicken breasts, cut into strips
  • 1 onion, chopped into cubes
  • 1 garlic clove, crushed
  • 500 grams chopped fresh mushrooms
  • 2/3 cup chicken stock
  • 1 Tablespoon tomato paste
  • 300 ml heavy cream
  • dash of paprika
  • 1 teaspoon cornflour diluted in 1 tablespoon water


Fry the chicken strips with 1 tablespoon of oil and 1 tablespoon of butter, then set aside. Add the rest of the oil and butter in the pan and fry the chopped onion, crushed garlic and chopped fresh mushroom. Return chicken to pan, add salt and pepper, chicken stock, tomato paste, cream, paprika and diluted cornflour and boil until sauce thickens. Serve with Basmati rice on the side. Enjoy!
