Chicken Biryani

Love making this flavorful, rich dish that takes no more than 30 minutes. You can adjust the spicy-ness based on your preference. It’s so satisfying and delicious- Find out for yourself:-)

What you need:

300 grams basmati rice
25 grams butter
1 large onion, finely chopped
1 bay leaf
3 cardamon pods
Small cinnamon stick
1 teaspoon turmeric
4 skinless chicken breasts, cut into strips
4 tablespoons curry paste(I used only 2 teaspoons so it�s mild for my kids)
850 ml chicken stock
Toasted almond flakes

Method:
Soak the rice in warm water, then wash in cold until the water runs clear. Heat butter in a saucepan and cook the onions with the bay leaf and other whole spices for 10 minutes. Sprinkle in the turmeric then add chicken and curry paste and cook until aromatic.
Stir in the rice into the pans, then pour over the stock. Cover and bring to a hard boil, then lower the heat to a minimum and cook the rice for another 5 minutes. Turn off the heat and leave for 10 minutes. Stir well, then serve with chopped almonds on top!
