This is one my my favorite recipes- hands down. There are so many versions of Chicken or Beef Stroganoff� but I feel like the combination of tomato sauce with cream gives the perfect taste:-)
What you need:
- 2 tablespoons cooking oil
- 2 Tablespoons olive oil
- 500 grams of chicken breasts, cut into strips
- 1 onion, chopped into cubes
- 1 garlic clove, crushed
- 500 grams chopped fresh mushrooms
- 2/3 cup chicken stock
- 1 Tablespoon tomato paste
- 300 ml heavy cream
- dash of paprika
- 1 teaspoon cornflour diluted in 1 tablespoon water
Method:
Fry the chicken strips with 1 tablespoon of oil and 1 tablespoon of butter, then set aside. Add the rest of the oil and butter in the pan and fry the chopped onion, crushed garlic and chopped fresh mushroom. Return chicken to pan, add salt and pepper, chicken stock, tomato paste, cream, paprika and diluted cornflour and boil until sauce thickens. Serve with Basmati rice on the side. Enjoy!
