Thai Chicken Curry

You know those hearty and filling meals that you can’t get enough of? Well, that’s one of them. The combination of curry and coconut milk makes this dish so rich with flavor, and the plus is that’s it’s healthy too! I always serve it with Basmati rice on the side, but it can also work with potato puree.


What you need:

1 chopped onion

2 garlic cloves, crushed

2 tablespoons olive oil

1 tablespoon curry powder(I use the mild option)

750 grams chicken parts

2 chopped carrots

2 chopped potatoes

1 can of coconut milk

1.5 cup of chicken broth

Salt and Pepper

How you can make it:

Fry the chopped onion with the 2 tablespoons of olive oil, then add the crushed garlic cloves. Add 1 teaspoon of curry powder and the chicken parts. Once the chicken is cooked, add the chopped carrots and potatoes(you can add other veggies you like as well!). Add one can of coconut milk and 1.5 cups of chicken stock. Season to your liking and boil for about 30 minutes until cooked.
