Baked fish with veggies

I’m a big fan of seafood and it’s one of the simplest things to cook. Love going to a market and choosing different types of seafood. This recipe will not take you more than 10 minutes to prepare and about 15 minutes in the oven.


You’ll need:

  • 2 whole fish
  • 1 crushed garlic clove
  • 1 teaspoon ginger rind(I freeze the ginger so it’s easier to work with it)
  • 2 tablespoons of oil
  • Juice of one lemon
  • Salt and pepper
  • 1 sliced carrot(length ways)
  • 6 pieces of asparagus

How to make it:

Preheat the oven at 180 degrees. Place the fish in a baking pan and season with salt and pepper on both sides.  In a bowl, combine the garlic, ginger, oil and lemon and pour on the fish.  Add the sliced carrot and asparagus, then bake for about 20 minutes, until the fish is flaky.
